I cant believe it has been almost 2 years since Scott and I decided to sign up for a gluten-free baking class at the San Francisco Baking Institute in hopes of fulfilling our dream of owning a gluten-free bakery. The reason behind our decision to open a bakery stems from a traumatic industrial accident that Scott had in 2008. It left him with months and months of rehab and a broken body, not fit, for construction. He had to continue to provide for his family and working with his hands is all he knew. Scott went back to his job 6 months later but the tole it took on his body and mind left him exhausted and almost hopeless. We had to get "creative". So over the next few months Scott and I brainstormed about our hopes, dreams, wants, and fears. What we kept coming up with was our love of baking. We talked about how we want to be together more (almost losing a loved one in a tragic accident can cause that reaction) and use our time to make a difference to others. Our brainstorming helped us combine mine and our 2nd child's gluten intolerance and Scott's inability to do hard labor and to make our dream a reality.
In January we will celebrate our 2 year Anniversary of our dream coming to fruition. We spend this time reflecting back on where we have been, how we got here and how we can make the next year even more successful.
We have found that owning a bakery and making it successful is a really hard job, but almost anything that is worth fight for is hard. It's been difficult dealing with doors being closed on us, but what we have found is that believing in our products and remembering our goal has opened doors left and right. We have a long way to go before we get to the place we dream of in our heads, but we will get there one day. We invite you to join our journey and help us celebrate our small accomplishments and set backs, along the way, and maybe cheer for us, and help us remember why we are here.
